CHICKEN CURRY is one of the healthiest and easiest option to prepare poultry.
This recipe has the rich flavor and aroma that you will surely love.
2 lbs chicken, cut into serving pieces
1 tbsp garlic, minced
1 medium onion, chopped
1 thumb ginger, cut into strips
1 big potato, cut into cubes
2 carrots, cut diagonally
3 stalks celery, cut diagonally
1 small red bell pepper, cut into cubes
1 small green bell pepper, cut into cubes
2 tbsp fish sauce
3 cups coconut milk
2 tbsp curry powder
1.Pan-fry the chicken and potatoes separately, or oven bake and set aside
2.In a pan, sauté the garlic, onion and ginger
3.Add the pan-fried/oven baked chicken, fish sauce, and curry powder
4.Add the potato cubes, then the carrots.
5.Add coconut milk and simmer until the chicken is tender
6.Put-in the red, green bell pepper and celery then simmer for 10 minutes
*Serve with rice or Naan bread.
